Bird’s Nest Christmas Cookie Recipe

- 1 1/2 cups sifted flour
- 3/4 cup softened butter
- 1/2 cup firmly packed brown sugar
- 1 egg (separated)
- 1/2 teaspoon vanilla extract
- 1 cup finely chopped walnuts

- Strawberry jelly

Sift flour in a medium sized bowl and set aside. Cream butter with electric beaters in a large metal bowl. Gradually add brown sugar and continue creaming until light and fluffy. Blend in egg yolk and vanilla and mix well. Add sifted flour and mix thoroughly. Chill dough for about an hour for easier handling. Shape dough into balls about 3/4 inch in diameter.

Dip into slightly beaten egg white and then roll into finely chopped walnuts. Place on an ungreased cookie sheet and press deep hole in center of each cookie with thumb, bake at 375 degrees for about 12 to 15 minutes until lightly golden brown. Cool on cookie rack and fill with strawberry jelly.
