Classically Deviled Happy Eggs — Delilah’s Recipe Book
Getting bored with the same old way to eat your eggs?
Here’s a recipe for a delicious change of pace when deciding how to enjoy them:
6 Free Range on Pasture eggs from the happy egg co.
Approx. 1 teaspoon Dijon mustard
On squeeze of lemon juice
Dash of salt and pepper
Chives for garnish
Start with 6 room temperature eggs from the happy egg co.
Place them in one inch of cold water in a saucepan
Bring to a rolling boil
Remove saucepan from flame and cover
Let sit for 15-17 minutes to harden eggs without overcooking
De-shell or “peel” eggs
Cut in 1/2 lengthwise
Remove happy egg yolks from egg whites, set egg whites aside
Mash egg yolks in a bowl, adding mayonnaise, Dijon mustard, a squeeze of lemon and a dash of salt and pepper
Pipe into egg white “shells”
Garnish with chives
