MELTING MOMENTS

1 cup butter, room temp.
3/4 cup corn starch, unsifted
1/3 cup powdered sugar, unsifted
1 cup all purpose flour, unsifted

FROSTING

4.5 oz. cream cheese, softened
1.5 cups powdered sugar, unsifted
3/8 tsp. almond extract
food coloring

Heat oven to 350 degrees.

Beat butter at low speed until creamy. Add corn starch and powdered sugar. Beat at med/high until fluffy. Stir in flour.

Dough will be soft. Refrigerate 45 min. or until OK to handle.

Roll in to 1" balls. Place 1 1/2" apart on ungreased cookie sheet (I use parchment paper). Make a slight indentation in cookie (like thumbprints). Bake at 350 degrees for 10-12 minutes, rotating cookie sheets after 5 minutes. Bake until firm and set, but not brown.

FROSTING

Blend cream cheese and powdered sugar until creamy. Add almond extract and food coloring. Put frosting in pastry bag with star tip and put a pretty little dollop of frosting on cookie.

I make these for all of our family get-togethers using different colors of frosting to fit the occasion. I just made them recently for my great nephews first birthday party. It was a "John Deere" theme, so I made them green and yellow. I will be making red and green for Christmas. This is how my niece describes this cookie: "You put it in your mouth, wait just a moment, and it melts!" I hope you like them as much as our family does.
