Peach Cookies

-3 eggs
-2 cups sugar
-1 cup vegetable oil
-1 tsp. vanilla extract
-4 tsp. baking powder
-1/2 tsp. salt
-1 cup milk
-6 cups flour

Filling is peach jam. Decoration is peach liqueur, yellow and red food coloring , sugar and mint leaves or other green stems.

Preheat oven to 350 degrees. Line baking sheets with parchment. Place eggs and sugar in a bowl, and beat with mixer for three minutes. Add oil, then mix milk and vanilla. Mix flour with baking powder and salt, and add to batter, and beat until combined. Roll into balls and bake 15-20 minutes.

With a sharp knife, cut out a small circle from center, and take crumbs and put aside. Break up cookie pieces into fine crumbs. Place small amount of peach jam in cookie hole, and place matching cookie together, and use jam as glue to hold them together.

Place 1/2 cup of peach liqueur in two separate bowls, and color one yellow and one red. Dip cookie in red, then yellow, and blot dry. Roll cookie in sugar. Place mint leaves or cloves on top for decoration.

They are beautiful for that special occasion like Christmas or weddings! I made 240 peach cookies for my daughter's wedding, and they were a big hit! Enjoy, and Happy Holidays!!!!
