Pumpkin And Sausage Pasta — Delilah’s Recipe Book

It’s that time of year again where there is pumpkin everything…but how about putting pumpkin with something savory?

Who’d have thought? Pumpkin and sausage don’t sound like they’d be a key combination, but putting together this list of ingredients sure makes for a delicious dish.

Pumpkin and Sausage Pasta

1 pkg ziti or rotini, cooked
1 pkg Italian sausage
1 medium onion, chopped
4 garlic cloves, minced
1 can pumpkin
1 8 oz can evaporated milk (use half and add more if you want it creamier)
2 tsp pumpkin spice (nutmeg, cinnamon, allspice)

Brown onions and garlic in olive oil, slowly stir in sausage and brown (if in a casing, take it out and cook loose).
Put aside cooked ingredients and cook pasta till al dente.
In pan with sausage, stir in pumpkin and spices and then slowly add in milk, heat up until warm.
Then add sausage mixture to the pan with pasta and mix well.
