Blueberries are everywhere!!! Here is a very simple Blueberry pie recipe. Serve a scoop of your favorite french vanilla or coffee flavored ice cream and voila!! You can save time and purchase the mini shells


  • 1 cup white sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 4 tablespoons lemon flavored gelatin mix
  • 4 cups fresh blueberries
  • 1 (9 inch) prepared graham cracker crust
  1. In a medium saucepan, mix together the sugar and cornstarch. Pour in water and bring to a full boil. Turn off heat and add in gelatin; stir until completely dissolved. Let cool.
  2. When mixture is cooled fold in blueberries. Gently pour into the graham cracker crust. Cover and refrigerate for about an hour or until ready to serve.
