I always look forward to friends coming over for dinner. It gives me an opportunity to try something different. Sometimes I get " Alexis what in the (heavens) is this? If your planning a dinner party, I always try and get a few favorites on the menu. My mom and her friends enjoyed this fun fish taco. It's healthy, well if you bake instead of fry.  The mango salsa I served on the side gave it my family's Caribbean flair. The spicy mayo can top the taco if you prefer a heavier option.  

Ingredients

  • 1 pound tilapia fillets, cut into chunks
  • 1/2 cup fresh lime juice( Marinade  for fish)
  • 1 tsp black pepper
  • Cover and refrigerate for 4 hours

  • 1/3 cup fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili sauce
  • Wisk ingredients together and set aside.

  • 1/2 cup mayonnaise
  • 2 chipotle chilies in adobo sauce
  • 1 tablespoon adobo sauce from chipotle peppers
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  •  1 teaspoon parsley
  • Combine ingredients to make the spicy mayo

  • 1/3 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 2 cups panko crumbs
  • salt and ground black pepper to taste
  • 1 cup vegetable oil for frying
  • Dip the fish in the flour, then egg and lastly bread crumbs. Fry fish until done.

    To assemble taco's simply grab a tortilla, add fish, coleslaw, cilantro, spoon sauce and or mayo on fish. Serve a chunky salsa on the side and enjoy !!
