There is nothing better than a good BBQ that has great sauce. Why not barbecue with a smokey plum sauce. Here's a great spin on your ordinary smokin BBQ. This sauce is great with chicken thighs or chicken breast

  • 2 1/2 quarts very ripe plums, pitted, o
  • 2 cloves garlic, pressed
  • 1/2 onion, finely chopped
  • 2 1/2cups white sugar
  • 1/4 cup apple cider vinegar
  • 2 tablespoons jerk seasoning
  • 1 jalapeno pepper, finely chopped (remove seeds for milder flavor if desired)
  • 3 teaspoons salt
    1. Squeeze the juice out of the plums and discard the pulp 
    2. Pour  plum juice into a small saucepan with garlic and onion, place over medium heat, and bring to a boil, reduce to a simmer.
    3. Pour the juice-onion mixture into a large pot, and add the remaining  Stir in the sugar, apple cider vinegar, jerk seasoning, jalapeno pepper and salt.
