Recipe: Terriyaki Chicken

So what’s for dinner tonight? If I could count the time I hear what’s for dinner. I am going to make a t-shirt with the question written on it. Tonight it’s Teriyaki Chicken.  Serve the chicken over brown and black rice.

You can find black rice at a Asian grocery store. It cooks best in a rice pot. If you’ve never used a rice pot it is in my opinion one of the best ways to cook rice. It’s never let me down once. My rice is always perfect !!

  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/2 cup white sugar
  • 1/2 cup soy sauce
  • 1/4 cup cider vinegar
  • 1/4 cup pineapple juice
  • 1 clove garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground black pepper
  • 6 skinless chicken thighs and 4 breasts

    1. In a small saucepan over low heat, combine the cornstarch, cold water, sugar, soy sauce, vinegar, pineapple juice,garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
    2. Preheat oven to 425
    3. Place chicken pieces in  baking dish. Brush chicken with the sauce on both sides.
    4. Bake in the preheated oven for 35 minutes.
