Everyone loves a sinful bite of chocolate cake. Make it easy on yourself and make these easy chocolate cupcakes -- just don't over-mix them!

  • 1/2 cup margarine
  • 1 cup water
  • 2 (1 ounce) squares unsweetened chocolate
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1/2 cup sour milk
  • Directions

    1. Preheat oven to 350 degrees In a microwave-safe bowl, microwave chocolate, margarine and water until melted. Stir occasionally until chocolate is smooth. Allow to cool to room temperature.
    2. In a large bowl, mix together flour, sugar, salt and soda. Pour in milk and eggs. Mix the cooled chocolate mixture into the batter. Pour into prepared pan.
    3. Bake at 350 degrees  for 18 to 22 minutes, or until a toothpick inserted into the cake comes out clean.
