If you are looking for a quick, easy and satisfying salad..This is it !!  The mix of feta, parmesan, Romano and swiss are all stars in this dish. I should warn you. If you are a lover of cheese you may not put your fork down. As always fresh is best. the addition of the raspberry balsamic makes it a huge hit.

  • 1 large head leaf lettuce - rinsed, dried and torn into bite-size pieces
  • 1 cup cubed Swiss cheese
  • 1 cup crumbled feta cheese
  • 1 cup shredded Parmesan cheese
  • 1 cup toasted pecan pieces
  • 1/2 cup sliced black olives
  • 1/2 cup cherry tomato
  • 1/2 cup olive oil
  • 1/2 cup raspberry balsamic vinegar
  • 1 tablespoon Italian seasoning
  • 1 tablespoon freshly ground black pepper
    1. Combine lettuce, olives, tomatoes, Swiss cheese, feta cheese, Parmesan and romano cheese and pecans in a large bowl. In a small bowl, whisk together oil, vinegar, Italian seasoning, and pepper. Add dressing to salad and toss well.
