What can you do with an over ripe banana? Make Banana bread!!!! One of my friends recently gave me a loaf she purchased on her recent visit to San Diego. I'm glad she was able to get it through TSA. Then again it is not a gel, liquid, cream or paste.  It was moist and delicious. I placed it in the microwave and ate it with my favorite vanilla ice cream.  This is not the recipe from the california Bakery, but it's just as yummy.

  • 1/2 cup buttermilk
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup white sugar
  • 2 small very ripe bananas, sliced
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup chopped walnuts
    1. Preheat oven to 350. Lightly grease a 9x5 inch loaf pan.
    2. In a blender, combine milk, eggs, oil, sugar and banana pieces. Process until smooth. In a large bowl, sift together all the flour, cinnamon, nutmeg baking powder, baking soda, and salt. Add banana mixture to dry ingredients. Mix well. Stir in nuts. Pour batter into prepared pan.
    3. Bake in preheated oven for 55 to 60 minutes until golden brown,
