Beat on medium speed, 1/4 cup unsweetened applesauce, 1/4 cup canola oil and 3/4 cup granulated sugar until well combined.
Then, beat in 1 egg and 1/2 tsp. pure vanilla.
In a separate bowl, whisk together 1 1/4 cup flour, 1/4 + 1/8 tsp. baking soda, 1/2 tsp. salt. Mix dry ingredients into wet.
Mix in one cup of chips (choose your favorite — cinnamon, butterscotch, peanut butter, white chocolate).
Chill 30 minutes.
Roll into tablespoon-sized balls, and place two inches apart on a baking sheet sprayed with cooking spray or lined with parchment paper (lower fat content will cause these suckers to stick even on a non-stick sheet).
Bake at 350 degrees for 14-16 minutes. (Check after 12 minutes to make sure they aren’t done early.) Edges should be lightly golden. Let cool 10 minutes, remove and cool completely on rack.
