We always try to look for a way to spice up our winter evenings...with food of course!

Here's a warm dish with a little bit of bite to add some heat to a cold winter night:

Spicy Vegetable Soup

Ingredients:
1 stick butter
1/4 cup olive oil
2 large carrots
3 stalks celery
1 medium yellow onion
2 cloves garlic, minced
1-1/2 cups cauliflower florets, cut small
1 can green chilies
1 cup kale, cut into pieces
1 cup spinach, cut into pieces
2 Tbsp. cilantro, chopped
1 medium jalapeno, seeded
1 can diced tomatoes
2 cups potatoes, quartered
3 to 4 cups veggie/tomato juice or V8
4 boxes vegetable (or chicken) broth

Seasonings:
Salt, cracked black pepper, red pepper flakes, green tabasco (and Siracha to taste).

Instructions:

In a heavy pot or pan, melt butter and olive oil over medium heat. Add carrots, celery, onion, jalapeno and sautée until veggies are starting to get tender. Add garlic, broth, kale, green chilies and spinach, stir to blend.

Add seasonings to taste and simmer on low heat for 1/2 hour. Add cauliflower, potatoes, tomato juice and season to taste. Continue to simmer until veggies and potatoes are tender; make sure you taste this soup every so often since the veggies and potatoes will absorb a lot of the salt and pepper. Serve with something to dip into it, and enjoy!
