TOFFEE CRUNCH BUTTER COOKIES

1 Stick Butter (room temp)
3/4 Cup Sugar
1 Egg
1/2 Tsp. Vanilla
1 1/2 Cups Flour
1/4 Tsp. Baking Soda
1/2 Tsp. Baking Powder

Mix the following in a separate bowl:

1/4 Cup English Toffee Bits
1/4 Cup Finely Chopped Walnuts
1/4 Cup Sugar

Beat butter and sugar until creamy. Add egg and vanilla, and beat well

Stir flour, salt, baking soda and baking powder in a separate bowl, then add to butter and sugar mixture.

Roll into large, teaspoon-sized balls then roll into the toffee, nut and sugar mixture, pressing slightly to coat.

Line cookie sheet with parchment paper, and bake at 350 for 11 minutes. Let cool; place on wire rack to cool completely.

Makes approx. 2 dozen.

This cookie is slightly crispy on the outside and chewy in the center. I came up with this idea when trying to invent something different. When my mom was alive, it was her all time favorite cookie! I'd make them all year round just to make her happy!
