This recipe came from an Italian lady my mom used to shop for in New Jersey. Her name was Clotilda Gamberi (we called her Tillie), and she was very sweet and gave me a beautiful Lane chest that I still have.

This recipe is super easy to make, and my family eats it for breakfast, lunch or dinner. It's best hot, but I eat it at room temperature too!

3 cup zucchini (sliced thin on a mandolin and quartered)
1 cup Bisquick
1/2 cup onions (finely chopped)
2 T parsley
1/2 cup Parmesan cheese
1/2 tsp pepper
1/2 cup olive oil
4 eggs
Dash of garlic & oregano

Place all ingredients in a mixing bowl and stir until well combined. Pour mixture into a buttered 13x9x2 pan. Bake at 350 degrees for 45 minutes.
